Taco Salad and Ice Cream Sundaes for 45

Menu for 45 people (all adults):
Taco salad, chili con queso dip, ice cream sundaes, lemonade

4 gallons lemonade
10 lbs. taco meat (This can be prepurchased as frozen, precooked taco meat which I then doctor up with a packet of taco seasoning mix. Otherwise, purchase 10 pounds of hamburger and the equivalent amount of taco seasoning and make it yourself.)
2 16-oz. cans kidney beans, heated
1 package taco seasoning
5 heads lettuce – be careful about the amount of lettuce you get. Some heads are bigger than others and you could run out. Sometimes I have used 3 heads, sometimes 5.
2 lbs. shredded cheese
4 lb. tomatoes
1 large onion – finely chopped
1 qt. quacamole
2 qt. sour cream
2 pints taco sauce

Chili Con Queso dip: (This can be made in a 6 quart crock pot and left to heat several hours before on “low” setting. )
3 lbs. cheese (I use Kraft Deluxe – American)
5 jalapenos, chopped
1 onion chopped
1 small can chopped chilis
2 cans diced tomatoes
Enough water to make it smooth

Ice Cream Sundaes:
2 1/2 gallons vanilla ice cream
1 bottle chocolate sauce
4-5 cans whipped cream – Usually I recommend 1 can of whipped cream per every ten guests.
1 bottle maraschino cherries
