Black Bean Salad

I got this recipe from Lisa Smith who found it in “Southern Living: 30 Years of Our Best Recipes”

3 ears fresh corn
1 jalapeno, seeded and chopped
1 small purple onion, chopped
1 avocado, peeled, seeded and chopped
2 large tomatoes, seeded and chopped
2 (15-oz) cans black beans, rinsed and drained
3-4 Tbsp. lime juice
2 Tbsp. olive oil
1 Tbsp. red wine vinegar
1 tsp. salt
1/2 tsp. ground pepper

1. Cook corn in boiling water to cover 5 minutes; drain corn and cool. Cut corn from cob.
2. Whisk together lime juice and next 4 ingredients in a large bowl.
3. Add corn, beans and remaining ingredients; toss to coat. Cover and chill 2 hours.
Yield: 6-8 servings
Options: Add 3 jalapenos and 1/4 cup fresh cilantro
