Easy Chicken and Stuffing

In every crock pot chicken and stuffing recipe I’ve seen online, the recipe calls for placing the chicken on the bottom of the crock pot and layering the stuffing and liquid on the chicken.  This recipe does the reverse, i.e. the stuffing is on the bottom with the chicken breasts laid on top of the stuffing. I think this makes for a moister, more flavorful stuffing since the chicken juices are absorbed into the stuffing during cooking.


Stove Top Stuffing (I prefer Pepperidge Farm cubed, herbed stuffing mix.  I doctor the Pepperidge Farm stuffing mix with chopped onions and celery.)
4 boneless, skinless chicken breasts
1 10-ounce cream of chicken soup with herbs


1.Prepare packaged stuffing mix as indicated on package.  The important thing is to prepare it with moisture as the specific package indicates.

2.  Spray crock with non-stick spray.  Layer stuffing in the bottom of crock pot.

3. Place 4 boneless chicken breasts on top of stuffing. They can overlap some, but try to arrange it with as little overlap as possible, even if you have to squash them in.

4. On top of the chicken pour one can of cream of chicken soup, undiluted. Just don’t add the liquid the soup can says to use when making it.

Add one can of mushrooms sliced if you prefer.

5. Turn crock pot on high and leave to cook on high for 4 to 5 hours or on low for 7-8 hours.
