Fruit Crisps (Apple and Blueberry) For Family Or A Crowd

APPLE CRISP

4 cups sliced tart apples (about 4 medium)
2/3 cup packed brown sugar
½ cup all-purpose flour
½ cup oats
¾ tsp. ground cinnamon
¾ tsp. ground nutmeg
1/3 cup margarine or butter, softened

Heat oven to 375 degrees.  Arrange apples in greased square pan, 8x8x2 inches.  Mix remaining ingredients; sprinkle over apples.

Bake until topping is golden brown and apples are tender, about 30 minutes.  Serve warm.  6 servings

To serve 40-50, I quadruple the recipe and use a #10 sized can of sliced apples.  Place in two deep dish aluminum foil pans and divide the topping between the two. Bakes for an hour.

 

BLUEBERRY CRISP

3 cups blueberries or 1 package (16-ounces) frozen, unsweetened blueberries
2 Tbsp lemon juice
2/3 cup packed brown sugar
½ cup all-purpose flour
½ cup oats
1/3 cup margarine or butter, softened
¾ tsp. ground cinnamon
¼ tsp. salt

Heat oven to 375 degrees.  Arrange blueberries in ungreased square baking pan, 8x8x2 inches.  Sprinkle with lemon juice.  Mix remaining ingredients; sprinkle on top.

Bake until topping is light brown and blueberries are hot, about 30 minutes.  Serve warm.  6 servings.

To serve 40-50, I quadruple the topping recipe.  I buy 7 pounds of frozen blueberries, divide them between two deep dish aluminum foil pans and cover with topping.  Bakes in oven for an hour.
