Orange Cream Fruit Salad

This recipe was a common side dish for many local caterers.   I suspect the popularity for its use by caterers was that the cream sauce preserved the bananas from becoming brown thus allowing the caterer to prepare this dish well in advance (no last minute slicing of bananas).   That’s a good thing, too, for hosts and hostesses!  

 

1 20-oz. can pineapple chunks, drained
2 11-oz. cans mandarin oranges, drained
2 chopped bananas
2 cups halved fresh strawberries
2 apples, peeled and chopped
1 pkg. instant vanilla pudding
1½ cups milk
1/3 cup frozen orange juice concentrate
¾ cup sour cream

Beat pudding, milk, and orange juice concentrate for 2 minutes. Add sour cream. Combine with fruit and refrigerate for 2 hours before serving.
