Crockpot Cranberry Relish

Ingredients 1X 3X
Fresh cranberries 1 pkg (12 oz) 3 pkg (36 oz)
Frozen orange juice concentrate 1/4 cup 3/4 cup
Honey* 1/2 cup 1 1/2 cups
Molasses* 1/2 cup 1 1/2 cups
Raspberry or cider vinegar 2-3 Tablespoons 6-9 Tablespoons
Dried apricots, slivered 1/2 cup 1 1/2 cups
Golden raisins 1/2 cup 1 1/2 cups
Walnuts or pecans, toasted and chopped, optional 1/2 cup 1 1/2 cups
Equipment 3 1/2 quart crockpot 6 quart crockpot

* 1 cup packed brown sugar can be substituted for the 1X quantity of honey and molasses.

In crockpot, mix together the cranberries, juice concentrate, honey, molasses and vinegar. Cover and cook on LOW about 2 hours. Add apricots and cook one more hour or until cranberry skins pop. Turn off heat. Stir in raisins and nuts. May be served at once but improves if you cool, then transfer to a covered container and refrigerate.
