Baked Garlic Cheese Grits

Even grit haters find they like this version. I get raves reviews every time I serve it.

Prep Time: 20 minutes
Cook Time:  50 minutes

Ingredients Serves 12 Serves 36
Chicken broth 6 cups 18 cups
Salt 1 teaspoon 3 teaspoons
Pepper 1/4 teaspoon 3/4 teaspoon
Garlic Powder 1/4 teaspoon 3/4 teaspoon
Grits, regular 2 cups 6 cups
Cheddar, shredded 16 ounces 48 ounces
Eggs, large, beaten 4 12
Butter, unsalted 1/2 cup 1 1/2 cups (3 sticks)
Milk 1/2 cup 1 1/2 cup
White Cheddar, grated 8 ounces 24 ounces
Pan size 4 quart casserole dish steam pan

Preheat the oven to 350 degrees F. Grease a 4-quart casserole dish or steam pan.

Bring the broth, salt, pepper, and garlic powder to a boil in a 2-quart saucepan (or large stock pot for large batch). Stir in the grits and whisk until completely combined. Reduce the heat to low and simmer until the grits are thick, about 8 to 10 minutes. Add the shredded Cheddar and milk and stir.  Whisk the eggs until scrambled and then temper them by adding spoonfuls of hot grit mixture to eggs and stirring.  Gradually stir in the eggs and butter, stirring until all are combined. Pour the mixture into the prepared casserole dish or steam pan. Sprinkle with the white Cheddar and bake for 35 to 40 minutes or until set.  For a steam pan, bake at least 50 minutes.
