Dips – Fruit, Cheese and Meat

APPLE DIP
I had this at a baby shower many years ago and loved it enough to track down the woman who brought it.  It’s perfect for those Autumn events.

8 oz. cream cheese, softened
3/4 cup brown sugar
1/4 cup white sugar
1 tsp. cinnamon
1 tsp. vanilla

Mix together and serve with slices of Granny Smith apples.


PINA COLADA FRUIT DIP

8-oz. can crushed pineapple in its own juice, undrained
3 ½-oz. pkg instant coconut pudding and pie filling
¾ cup milk
½ cup sour cream

In food processor, combine all ingredients. Cover and process 30 seconds. Refrigerate several hours or overnight to blend flavors. Serve with fresh fruit. 2 ½ cups.


CHOCOLATE MINT FRUIT DIP

1/2 cup nonfat sour cream
1/4 cup prepared light chocolate fudge sauce
3 to 4 drops peppermint extract

MARSHMALLOW FRUIT DIP
This is my number 1 dip recipe I use for wedding receptions.  It’s so simple yet people love the cheesecake-like flavor it gives fresh fruit.

8 oz. cream cheese, softened
16 oz. marshmallow fluff

Mix together and refrigerate until served.

MARGUERITA DIP

1/2 cup whipping cream
1/2 cup dairy sour cream
1 3-ounce package cream cheese, cut up and softened
1/4 cup sifted powdered sugar
1 tablespoon tequila
1 tablespoon orange juice concentrate
1 tablespoon lime juice

Dipping items:
3 cups angel and/or pound cake cubes
3 cups assorted fresh fruit (strawberries, cubed melon, and/or seedless red or green grapes)

1. For margarita dip, place sour cream, cream cheese, powdered sugar, tequila, orange juice concentrate, and lime juice in a blender container or food processor bowl. Cover; blend or process until combined. Add whipping cream. Cover; blend or process until fluffy and mixture mounds. Serve immediately or cover and chill up to 24 hours.

2. Arrange small skewers of cake and fruit on a serving platter. Serve with dip. Makes 1-3/4 cups dip (enough for 12 servings.)


SPINACH DIP

2 packages of frozen spinach, thawed and drained
1big brick of Velveeta cheese
1 green pepper, chopped
1 red pepper, chopped
1 big onion, chopped
1/4 cup milk

Heat through until melted together. Serve in hollowed out round bread loaf. Serve French bread cubes and veggies to dip.


SUZIE’S CHEESE SPREAD
This makes a LOT of spreadable cheese.  One bathc is enough to get my family through the holidays.

16 oz. Cheese Whiz
10-oz. Cracker Barrel Extra Sharp cheddar, shredded
8 oz. Cream cheese
Process all the above in food processor.

Add 1 small onion, chopped
1-2 cloves garlic (or 1 tsp minced garlic)
bacon bits to taste

Store in refrigerator.
