Oven Scrambled Eggs For 100

SERVES 100

2 cups butter, melted
100 eggs, beaten
3 Tablespoons salt
2 1/2 quarts milk

1. Divide butter among 2 steam pans.
2. Combine eggs and salt; mix well.
3. Gradually stir in milk.
4. Pour evenly in steam pans.
5. Bake, uncovered, at 350 degrees for 10 minutes; stir.
6. Bake 10-15 minutes more or until eggs are set.
7. Serve immediately.
