Fresh Fruit in Raspberry Grand Marnier Sauce

Because of the festive green and red color of this dish, I like to serve it during the Christmas season.

Ingredients Serves 4 Serves 60
Fresh/Frozen Raspberries 2/3 cup 60 oz. frozen
Orange juice 1 Tbsp + 1 tsp. 1 1/3 cup
Lemon juice 2 teaspoons 2/3 cup
Orange rind 1/8  teaspoon 2 teaspoons
Green grapes, halved 1 cup 12 pounds
Strawberries, sliced 1 cup 9 quarts
Grand Marnier 2 tsp. 2/3 cup
Sugar 2 tsp. 2/3 cup

Puree the raspberries in the blender, using a little water if necessary. Strain to remove any seeds although I don’t always strain the seeds and I haven’t noticed any difference in taste or quality.   Straining those seeds can be a real chore!

Add the orange juice, lemon juice and orange rind to the puree.

Toss the strawberries and grapes with the Grand Marnier and sugar. Let marinate for one hour.   Those 2.5 gallon Ziplock plastic bags are great for this step, by the way.

To serve, place the strawberries and grapes in four individual dessert cups. Pour equal portions f raspberry sauce on top.  If serving dozens of guests, arrange the number of cups you need on the prep table and divide the fruit evenly among them.   Putting the sauce in a pitcher to pour on top of the fruit will make the job go quicker.   Divide the sauce evenly among the cups.
