Apricot Glazed Ham

1 (8 1/2-pound) fully cooked ham
About 40 whole cloves
Vegetable cooking spray
1 (10-ounce) jar apricot spread, no sugar (I used Smuckers Simply Fruit)
3/4 cup unsweetened orange juice
1 Tbsp. Dijon mustard
1 1/2 tsp. grated fresh ginger root (I use the grated ginger in a jar)
3/4 tsp. hot sauce

Remove skin from ham; trim fat. Make shallow cuts in diamond pattern on outside of ham, and insert cloves. Place ham on a rack coated with cooking spray; place rack in shallow roasting pan.

Bake at 325 degrees for 1 hour. Combine apricot spread and remaining ingredients; reserve 1 cup mixture, and set aside. Brush ham lightly with remaining mixture, and cover with aluminum foil. Bake at 325 degrees for for 2 to 2 1/2 hours or until a meat thermometer registers 140 degrees, brushing with apricot mixture every 30 minutes.

Warm 1 cup reserved apricot mixture; serve with ham. Yield: 20 servings.

For Homegroup Leaders and Wives Christmas Dinner, I bought three Boar’s Head Sweet Slice half hams totaling 15 pounds to serve 50 people. Next time I’ll but 20 pounds. I did not trim the skin or fat. I placed all three half hams in a steam pan and cooked them according to directions. I tripled all other ingredients.
