Lunch for 50-60 (Soup, Salad and Subs)

Well, not exactly subs…

This is a very easy lunch to execute but it is a little more “upscale” than just tomato soup and grilled cheese sandwiches.  The soup can be made the day ahead and reheated.   You can further bulk out this menu by adding 2 large jars of applesauce.

Black Bean Soup – 10X recipe   This was cooked in an 18-22 quart electric roaster.

Salad – 6 pounds bagged salad
Slivered almonds – 16 ounces
Dried cranberries – 24 ounces
Feta cheese – 1.5 pounds
Grape tomatoes – 3 pounds
Cucumber coins – About six large cucumbers sliced
Dressings – Catalina,  Ranch and Honey Mustard

Kaiser rolls – 70
Sliced  tomatoes – 8
Swiss and American cheeses – 4 pounds total
Lettuce – one head
Lunch meats – 15 pounds total divided between ham and turkey
Mayo and mustard

Coke Classic – 3 6-pack bottles
Diet Coke – 2 6-packs
Sprite – 2 6-packs
Bottled water
Lipton Green Tea – 1  6-pack bottles
Ice – 45 pounds

Pumpkin pie – 6 frozen pies baked in the morning
Whipped cream – 4 cans
