Auntie Jeanne’s Anti-Cole Slaw (A no mayo version)

People who dislike mayo-based cole slaw will love this tangy, crunchy, unusual cabbage salad that’s unlike any salad I’ve ever tasted made with cabbage. The sesame seeds add a nice taste while the almonds add another dimension of texture. The first time I served this recipe, it was for a church luncheon. People had hardly left the buffet line before several made the effort to get up from their seats and ask me for the recipe.   I always get multiple requests for the recipe when I serve this.

Cabbage, shredded 1 head 3 heads
Green Onions, thinly sliced 2 bunches 6 large bunches
Almonds, slivered, blanched 1 cup 3 cups
Sesame seeds 1/4 – 1/2  cups 3/4- 1.5  cups
Butter 1/4 cups 3/4 cups
Serves 10-12 40-50

1.  Amounts of green onions, sesame seeds and almonds may be a matter of personal taste.  I personally like a lot of onions and sesame seeds but you can adjust up or down to suit your tastes.

2.  Saute in frying pan the sesame seeds, almonds and butter until lightly browned.

Dressing: The success of this recipe depends on the ratio of dressing to cabbage.  Some heads of cabbage are so large you may need to make another half batch of dressing to ensure proper flavor.  The 1X batch is enough for a smallish cabbage, the size of a large softball.    1 1/2 x recipe batch is for a very large cabbage head.

Ingredients 1X 1 1/2 X 3X
Olive Oil 1/2 cup 3/4 cups 1 1/2 cups
White Vinegar 1/4 cup 1 1/2 gallons 3/4 cup
Soy Sauce 2 1/2 tsp. 3 3/4 tsp. 7 1/2 tsp.
Sugar 1/2 cup 3/4 cup 1 1/2 cup

1.  Put in a jar with lid and shake to thoroughly mix.

2.  Mix together the cabbage, onions, almonds, sesame seeds and dressing.
