Menu

Swedish Meatballs – 12 pounds, 4 batches of sauce
Reuben Dip
– 3 batches, 2 loaves cocktail rye bread
Cheesy Chives Crisps
– 1 batch
Veggie Tray – 2 sliced cucumbers, large bag of baby carrots, 2 pints of grape tomatoes, Ranch Dip made with sour cream and 1 envelope of Ranch Dip
Deviled Eggs – 24 eggs making 48 deviled egg halves
Spanakopita – 24 pieces/half the package
Spinach and Artichoke Cheese Ball with crackers

Hot cocoa – 1 gallon
Hot spiced Cider – 1 gallon
Coffee and tea
Ginger ale and cranberry juice “punch” – 2 bottles of ginger ale and 1 bottle cranberry juice

Desserts

Kahlua Tiramisu – Double recipe, all gone
Banana Pudding – tripled recipe,  too much….double next time
Razzleberry Pie  (Marie Calendars frozen pies from the store) – 3 pies, one left over
Pumpkin – Chocolate Cake with cream cheese frosting

Food Prep

Five  Days Ahead
Meatball sauce and frozen with meatballs (see recipe)
Make artichoke and spinach cheeseball
Make Reuben Dip and freeze

Day Before
Make Tiramisu
Make deviled eggs
Make Pumpkin/Chocolate cake
Make cheesy chive crisps

Day Of Event Schedule
1:00 pm Bake pies
3:30 pm Frozen meatballs and Reuben dip into pans and out in 325 degree oven
5:00 pm Make banana pudding and assemble
Cider and hot cocoa in pots on stove on low to medium heat
5:30 pm Banana pudding in oven
Spanakopita in oven
Chafers lit
Coffee started
Cider/Hot cocoa begun heating
Vegetables and dip/cheesy crisps on buffet table
6:00 pm – 6:45 pm Savory appetizers served
6:45 pm – 7:30 pm Game played, gifts given (Waitstaff changes the buffet table over to dessert service during this time. They also prep the desserts at this time by cutting into slices/pieces.)
7:30 pm Desserts served.
